I finally made this with subs I had on hand - minced yellow onion instead of scallions, brown rice instead of farrow and I threw in some chopped toasted pecans just because. This will now be on permanent rotation - it was fabulous! Wonderful fresh bright bracing flavors of the lemon, parsley and feta balanced out with the mellow earthy and sweet butternut squash - very satisfying!!

Elizabeth, this inspired me to make something similar, and I didn't have farro, so I made quinoa with vegetable broth, roasted 1/2 cup diced onion with some diced peppers along with the squash, and left out the feta - a delicious pilaf! Thank you.

Wait… there was really a class called "Bachelor Living" when you were in school? That's kind of amazing -- it totally brings to mind images of Christopher Walken as <a href="http://www.hulu.com/watch/4191/saturday-night-live-the-continental" rel="nofollow">"The Continental"</a> on SNL. Smoking jacket, thin cigar, fake moustache…

On a delicious side note, I am so. glad. it's. roasted. squash. season. This recipe is first on my list after today's farmer's market visit.

Elizabeth, this recipe sounds wonderful. The only thing missing is the incorporation of the roasted squash into the salad. The photos are beautiful. It looks like the squash are added along with the feta cheese and tossed together.

Being in band, I was jealous of both Shop class and Home Ec. (if only they taught boys to cook).

Thank you Elizabeth. This gorgeous dish makes me salivate for fall - I'll prepare farro while playing fado music :)

I also LOVED home ec and wish I still had that black and white polka dot a-line shift I made. At my school all the boys had Shop, which made me as jealous as Bachelor Living.
